Pineapple Fried Rice


Ingredients (use vegan versions):

  • 1 medium size can of diced pineapple
  • 2 cups straw mushrooms, cut in half
  • 2 cups diced onion
  • 2 cups diced tomato
  • 2 cups snake or green bean, cut into 1/2 inch lengths
  • 1 cup soy protein
  • 1/2 cup well-pounded mature ginger
  • 8 cups cooked rice
  • 1 tablespoon chopped garlic
  • 1 teaspoon pepper
  • 1 teaspoon palm vegan sugar
  • 1 tablespoon fermented soy bean
  • 1 tablespoon light soy sauce


Scald the beans in boiling water and
set aside.

Fry garlic in oil. When it
begins to brown, add mushrooms and soy
protein and fry, stirring and turning
regularly. Season to taste with
ginger, fermented soybean, light soy
sauce, vegan sugar and pepper.

Then add
pineapple and then rice, onion, and
tomato, stirring and turning to mix
well. Add the beans, mix in well,
remove from heat and serve.
