Bean and Shroom Burgers

Ingredients (use vegan versions):


  • 1 8-9 oz. can red kidney beans, mashed
  • 1/2 cup vegan bread crumbs
  • 1 tablespoon rice emilk
  • 1 tablespoon olive oil
  • 4 small white mushrooms, diced

Directions:

Mix together kidney beans, mushrooms, rice milk and vegan bread crumbs. Heat oil over medium
heat
in a shallow pan. Split the bean mixture in half and form it into 2 patties(you can freeze
the other one for later if you like). Fry it in the oil until brown on both sides. Serve
however you prefer (in a pita is pretty good, or on dark rye).


Serves: 2


Preparation time: 10-15 min
