Balsamic Bean Salad

.

Ingredients (use vegan versions):


  • 1 can garbanzo beans, rinsed
  • 1 can black beans, rinsed
  • 1 can red beans, rinsed
  • 1/2 cup pimiento-stuffed green olives, sliced
  • 1/2 cup black olives, sliced (kalamata are good)
  • 1 small leek, chopped
  • 1/2 med. red onion, chopped
  • 1/2 cup pepperoncinis, chopped
  • 1/2 tablespoon white vinegar
  • 1 – 2 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • dash salt
  • lots of fresh, cracked pepper

Directions:


Mix all ingredients together. You can serve it immediately,
but it’s very tasty after being in the fridge for a couple
of hours.


Serves: 8


Preparation time: 30 minutes
