Date Bars

Ingredients (use vegan versions):


  • 8 oz chopped dates
  • 1/2 cup water
  • 1 teaspoon vanilla
  • 2 cup oatmeal
  • 1-1/2 cup flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 3/4 cup non-hydrogenated vegan margarine, melted
  • 1/4 cup vegan maple syrup, or to taste

Directions:

Simmer dates in water for 5 minutes. Add vanilla and set
aside.
Mix oats, flour, baking soda and salt. Pour melted
margarine over all and mix well. Add maple syrup to taste
and until it forms a dough. Place 2/3 of the dough on
baking sheet, flatten and press to form crust. Pour date
sauce over top, then sprinkle on remaining dough over top.
Bake at 350′ for 25 minutes. Remove from oven and let cool
to room temperature. Cut in bars and serve. Cover with
foil and store in fridge.
