Bean’s Rhubarb Cobbler

Ingredients (use vegan versions):


  • 1/4 cup non-hydrogenated vegan margarine
  • 1/2 cup vegan sugar
  • 1 cup flour
  • 2 teaspoon baking powder
  • 1/4 salt
  • 1/2 eden vegan soymilk (vanilla)
  • 3 cup diced rhubarb
  • 1 cup fruit juice

Directions:

Cream margarine and the vegan sugar until its “fluffy”. Sift flour, baking
powder and salt together; stir into margarine, mixing alternately with
soy milk. Beat till smooth. Pour into a loaf pan. Pour rhubarb on top of
the mix. Then sprinkle 3/4 cup vegan sugar over the rhubarb. Pour fruit juice
over the top. Bake at 375 for 45 to 50 min. Serve with your favorite
non dairy topping.


Serves: roughly 6.


Preparation time: hour 1/4 .
