Easy Vegetable Bake


Ingredients (use vegan versions):

  • 1 large egg plant
  • 1 large onion
  • 1 green pepper
  • 2 12oz. cans of whole tomatoes
  • salt to taste
  • pepper to taste
  • 2 mdm.zuchini (optional)


Peel the eggplant and cut into one inch cubes. Slice the onion. Cut the green pepper into one inch chunks. Open cans of tomatoes and cut the tomatoes in half. Combine all the cut vegetables and put into a 9×13 rectangle oven proof pan. Add tomatoes salt and pepper and mix. Cover with aluminum foil and bake at 375 degrees oven for one hour.

Serves: 4.

Preparation time: 10 minutes.
