Zucchini Lentil Stew

Ingredients (use vegan versions):


  • 2 cup lentils, rinsed
  • 1 can vegetable broth + 1 can water
  • 1 can stewed tomatoes or 2-3 fresh tomatoes, chopped
  • 4-5 small zucchini, cubed
  • 1/4 teaspoon dried thyme
  • 2-4 cloves garlic, minced
  • 1 1/2 teaspoon salt
  • dash crushed red pepper

Directions:


Combine all ingredients in large stock pot. Bring to a
boil. Reduce heat and simmer until tender, about 1 to 1.5
hours.


Serves: 5


Preparation time: 2 hrs approx.
