Kristi’s Favorite Baked Potato


Ingredients (use vegan versions):

  • 1 potato
  • dairy free non-hydrogenated vegan margarine
  • ranch dressing
  • dairy free shredded cheese
  • imitation bacon bits
  • salt and pepper


Cook potato for 5 to 7 minutes in microwave. Take it out and add the cheese. Microwave
for 45 seconds. Take it out and add margarine, ranch dressing, bacon bits and salt and
pepper, if you feel it’s necessary. By using a fork, mash ut up. Microwave again if you
feel it needs it.
