Peanut Butter Broccoli


Ingredients (use vegan versions):

  • 1 stalk broccoli
  • 2 tablespoons peanut butter
  • 1 tablespoon sesame seeds (optional)
  • 1 tablespoon vegan maple syrup or other gooey sweetener
  • 1 teaspoon cooking oil


Put the oil in a pan over medium high
heat. Chop up broccoli stalk. When oil is
hot, toss in sesame seeds if desired,
toast, and then add the broccoli pieces.
Stir frequently.

Mix the peanut butter
and the vegan maple syrup (or whatever you
would like to use). Spoon onto the
broccoli and stir up. When the mixture
starts to turn darker brown remove and

The only thing you really have to
worry about with this recipe is
overcooking cause even when it’s
undercooked its still good. I actually
make this same mixture raw (just leave
out the oil).

Serves: 1-2

Preparation time: 15-20 minutes
