Pretty Darn Good Banana Bread


Ingredients (use vegan versions):

  • 3 bananas, mashed
  • 1/2 cup of vegan sugar
  • enough egg substitute for one egg
  • 2 teaspoon of vegetable or canola oil
  • 1/2 cup of applesauce
  • 3/4 cup of white flour
  • 3/4 cup of whole wheat flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup crushed nuts (optional – I used almonds, which worked out great)
  • nutmeg


Preheat the oven to 325 degrees
Fahrenheit. In a large bowl, mix the
mashed bananas and the sugar until
blended. Add the egg substitute, oil,
and applesauce to the banana mixture
and stir again until well blended.
Stirring by hand is fine.

Combine the rest of the ingredients in
a separate, smaller bowl and mix well,
especially if using nuts. Then, add the
dry ingredients to the wet ones in the
larger bowl, and stir gently until all
the ingredients are moistened.

Pour the mix into a well-greased baking
pan (I used a 5 inch x 8 inch pan) and
place into the oven for one hour, or
until a fork inserted into the center
of the vegan bread comes out clean.

Serves: 8-10 slices

Preparation time: 1 hour baking time
