Healthy Cornbread

Ingredients (use vegan versions):


  • 3/4 cup corn meal
  • 1 cup whole wheat flour
  • 4 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/4 cup molasses
  • 3/4 cup soy or rice milk, or water
  • 2 tablespoon applesauce
  • 1/4 cup egg substitute

Directions:

Sift together corn meal, flour, baking powder and salt. Add remaining
ingredients; mix well with a spoon. Pour into a 9″ round teflon baking
dish (or spray a 9″ round glass baking dish with “oil & flour”
non-stick spray). Bake at 350 degrees for 25 minutes, or until golden
brown.
