Karen's' Veggie Potato Boats

To make this recipe you will need some of the mixture also used in my Veggie Vol-au-Vents. You will need approximately equal amounts of the vol-au-vent sauce mixture to the mashed potato mixture (that you will have once the potatoes are cooked). Each serving will require approximately 1 large potato, or 1 and a half medium sized potatoes per serve. This recipe is also excellent to serve at parties and makes a nice change from the usual party food….

 

Ingredients

  • Medium-Large Potatoes, washed but not peeled
  • Karen’s Veggie Vol-au-Vent Mixture
  • Grated Cheese
  • Chopped fresh chives or Spring Onions (“Shallots”)
  • Salt & Pepper to taste (preferably freshly ground)

 

Instructions

  • Preheat the oven to a med.-high temperature (about 180-200 degrees should be fine, depending on your oven).

  • Prick the potatoes with a fork or a knife, and place them in a microwave oven & cook until they are soft inside (but are still not quite cooked enough to eat).
  • Remove the potatoes from the microwave & leave to cool for a minute (you can rinse them under cold water if you are in a hurry).
  • Once they are cooled enough to handle, cut the potatoes in half & scoop out the inside of them with a spoon, leaving just a little of the potato still attached to the potato skin (do not remove too muck, or they will collapse during cooking…)
  • Place the scooped out potato mixture into a bowl, and mash it with a fork. Add some salt & pepper & stir. Add the vegetable vol-au-vent mixture to it & gently fold it through the mashed potato until it is well combined – you can also add more grated cheese if you wish, too.
  • Spoon the mixture back into the potato skins, top with a little grated cheese & bake until the cheese has melted & the potatoes are warmed through well.
  • Remove from the oven, top with some chopped chives or spring onions (“Shallots”) and serve. Enjoy!
