Autumn Breakfast Muffins

Ingredients (use vegan versions):


  • 2 cups sifted flour
  • 1 teaspoon salt
  • 4 teaspoons baking powder
  • 1 tablespoon vegan sugar
  • 4 tablespoons apple sauce
  • 3/4 cup natural vegan soymilk (or vanilla soy)
  • 1/4 cup shredded dates
  • 1/4 cup chopped walnuts
  • 20 vegan marshmellows

Directions:


Pre-heat oven to 450 degrees.


Sift flour together with salt, baking powder, and
vegan sugar in a mixing bowl.


Add in the apple sauce.


Add the soy milk gradually to make soft dough.
Place a teaspoon of the dough in small non-stick
muffin pan.


Place over this a marshmellow, some shredded
dates, and chopped nuts.


Bake at 450 degree oven for 15 minutes, until
brown. Serve hot.
