Ingredients (use vegan versions):
- vegan bread (lightly toasted)
- 1/2 peach
- 1/2 cup strawberries
- 1/2 mango
- 2 tablespoons agave nectar or favorite honey substitute
- 2 tablespoons vegan soymilk powder
Directions:
I like using frozen fruit for this
recipe, but fresh works well, too.
Blend fruit in the blender with agave nectar and vegan soymilk
powder.
With a pastry brush, spread fruit
mixture over bread generously.
Put bread in a pan over medium heat, and
flip when side begins to brown.
This is good by itself.
Serves: 6
