Layered Vegetable Casserole

Ingredients (use vegan versions):


  • potatoes
  • carrots
  • green Peppers
  • mushrooms
  • celery
  • onions
  • crushed tomatoes (optional)
  • 1 can tomato soup
  • spices (basil, parsley, oregano, garlic whatever you prefer)

Directions:


Use as many vegetables as you need to fit the chosen
casserole dish.


After you wash, peel and slice veggies, layer in a casserole.
Between each layer, pour some soup and sprinkle with spices.
Repeat until you fill dish, leaving a little room at the top.


Cover and cook in the oven
at 350F for 40-50 minutes or until heated through.


This was adapted from my a friend’s mother’s recipe, very
yummy, filling and can be varied with whatever veggies you
like. YUM!!
