Anti-Lettuce Salad

.

Ingredients (use vegan versions):


  • 1 whole avacado
  • 1 large tomato
  • 1 cucumber
  • some green olives
  • some black olives
  • a little onion

Directions:

Skin and pit the avocado and chop into chunks


Cut up tomato into chunks


Peel the cucumber and chop into chunks also


Add the black and green olives


Add the onion to your own taste


Pour dressing over top (I use Newman’s Own balsamic
vinegarette) Yummy!


You should eat this in a couple of days because the avocado
gets brown and mushy


Serves: a few


Preparation time: 15 min
